Several
weeks ago, before the Pastor and Mrs. Hartmann left, they introduced us to a
lovely Zambian named Chisomo. We had
gone out to dinner with her and the Hartmanns before they left on
furlough. Pastor Hartmann helped us
exchange numbers so we could hang out later on and that is exactly what we had
the opportunity to do this past Saturday.
On
Saturday Chisomo, Mel, myself and Vicki a friend from Chisomo’s work enjoyed
lunch at Shako’s Grill. We enjoyed a
lunch full of laughs, delicious, food, and stories of living in Zambia. The menu was quite impressive and we all enjoyed
what we had. Chisomo said she normally
plays it safe when ordering but she actually ordered impala for the first
time. Mel and I can now cross that off
the list of foods to try… It was quite
chewy and we both agreed the taste and texture was “interesting”. The restaurant we went to use to be a
Mexican restaurant. As we have noticed,
and Chisomo and Vicki affirmed, there aren’t really any places to get a good
Mexican meal around here. Mel and I are
starting to dream about delicious taco salads and macho nachos. We can’t wait to have this food back home!
Speaking
of tacos, yesterday after church, Mrs. Birner invited us over to her house for
a taco night!! We enjoyed delicious
tacos on tortillas from Mezza and topped them with all the fixings. Molly made a delicious homemade salsa and Mel
made some amazing guacamole. I grated
some cheese. Put it all together with
lettuce, taco meat, plain greek yogurt and we called it deliciousness…
After
dinner Molly, Mel and I enjoyed a campfire with leftover chocolate-covered
Easter bunnies, peanut butter and more marshmallows. We have been so thankful to have such lovely
neighbors and we are equally as thankful for the few more days with have with
both Mrs. Birner and Molly! We have
thoroughly enjoyed their company and are going to miss them so much.
